Beerenauslese (bear-en-ows-lay-zeh) is a rich, honeyed dessert wine made from grapes that have been shriveled by the naturally occurring botrytis mold. Botrytis draws water out of them, leaving behind an ultra-concentrated nectar. The result is an intense, vibrant sweet wine that is gorgeous on its own, and stunning with desserts that feature fresh fruits.
